My aim is to bring to your table food sourced from around the local area, supporting as many independent producers as possible. I am especially keen to use ingredients based on local and seasonal sourcing and high animal welfare standards. I don't look to source organic over another produce purely because it has a label. Often produce is organically produced but not organically certified.
